A user asks if it is possible to make a chocolate ganache using the CKE food processor and emulsifier by Sammic. This is our chef's response.
Making a ganache using the Sammic food processor and emulsifier is not a problem. The only point that needs to be taken into account is the speed and the bowl capacity of our emulsifier.
It is best to work at a medium speed that allows you to see, through the transparent cover, how your ganache is progressing.
If what you want to do is soften a ganache that has already set, you can also use the Sammic food processor and emulsifier and thus incorporate a ganache that has hardened so it is once again ready to use.
This video, made in 2012, features Ruth Selby, one of the winners of the BasqueStage grants, preparing garlic mayonnaise and chocolate ganache using the Sammic food processor and emulsifier.
